Celebration Sponge Cake

Sponge cake recipe is a dream for celebrations whether it's a birthday or the elegance of a Mother's Day celebration, it looks beautiful, has a soft texture and tastes divine. The cake cutting is the centrepiece and the table is where is the experience takes place.
SPONGE CAKE
Ingredients
- 4 free-range eggs at room temperature (seperate whites and yokes)
- ¾ cup caster sugar
- ¾ cup cornflour
- 2 tablespoons plain flour
- ¼ teaspoon baking soda
- ½ teaspoon cream of tartar
Method
- Beat egg whites using an electric mixer and gradually add the sugar until stiff and meringue-like (around 8–10 mins).
- Add the egg yokes one at a time.
- Sift cornflour, plain flour, baking soda & cream of tartar three times.
- Add sifted flours using a whisk by hand and folding gently until almost combined. (Fold gently, the air is what makes it fluffy).
- Divide into two 20cm tins or one large tin that has been buttered and lined with baking paper.
- Bake at 200°C (400°F) for 10 minutes. Cake is cooked when sides are shrinking away from tin.
- Remove from oven. Cool on wire rack for 10 minutes before removing the sponges from the pans.
- Cool completely.
- Fill just before serving. Serve with fresh whipped cream and strawberries, just like in the photo.
