We were having an Engagement Party in the family and we went to Cakes by Suzi to create our Engagement Cake for 30 people. The 16" round Vanilla Dream Cake with Swiss Meringue Icing was decorated with edible flowers that were sourced to perfectly match the colour palette. Suzi is a Perth based Pastry Chef creating luxe bespoke cakes for weddings, engagements, birthdays and events. She has been a Pastry Chef 10 years and Florist of 7 years using recipes perfected over 6 years. Has a good sense of humour.
What is the Cakes by Suzi difference?
Perth’s only whisk and bowl wedding cake artist. Weighing and hand whisking cake batter in a standard bowl, rather than in an electric mixer to achieve the MOST unbelievably divine texture.
Favourite childhood baking memory?
I have the most fond memories of both my mum and grandmother baking. Though especially my mum. For every birthday she'd bake a cake, all from scratch. And it was always me and my siblings licking out the bowl at the end of the night. I have the most embarrassing photo of me with a giant ring of chocolate around my face. I was definitely the messiest 😂
Common cake making mistake and how to avoid it?
Many people want to bake and decorate a cake all in a few short hours, which sounds great in theory. Though will result in a misshaped cake with melted icing dripping everywhere. The best way to avoid this is to bake your cake a couple days in advance, cool overnight and then apply the icing the following day. You'll have a beautiful looking cake with a luscious icing layer, and you won't feel stressed about managing your time.
Best way to store your cake at home?
Cake is best stored in an airtight container, or if you're given a white cake box with your order, then simply wrapping this in Gladwrap will keep it nice and moist. Leaving it in the cake box without wrap is fine for a day or two, though if you're planning to save portions for later, some extra wrap will make a world of difference.
I love to cook?
At the moment, I love making a spicy fish taco. I'm quite heavy with the spice on the fish, and then pair it with plenty of lettuce and tomato to balance the flavours and then a nice drizzle of mayonnaise - So delicious!
Currently listening in the kitchen when baking?
My go to is always George Ezra, his deep soothing voice is absolutely incredible! So if I need a pick me up this is always my first choice ☺️.
Favourite kitchen items used for whisk and bowl method?
The biggest bowl I can find and a really great balloon whisk! I actually get really attached to my favourite kitchen items and my favourite whisk is on the way out. So I'm a little nervous about finding a new amazing one. If anyone reading this has an old Jamie Oliver Whisk they don't use, let me know haha.
